How to make bucatini carbonara

Fancy trying your hand at making bucatini carbonara? Kick off by chucking the pasta into a pot brimming with water, reports . Lob in a touch of salt and boil the pasta as per the guidance on the packet.


Then pop a sizable pan on the cooker and crank it up to a moderate heat. Once the pan's nice and warm, toss in the smoked pancetta and fry up until it's sumptuously golden and crisp.


After achieving the desired crispiness, kill the heat and lavish it liberally with black pepper. Firstly, separate the yolks from the whites of two eggs. Pop the yolks in a bowl and either discard the whites or keep them for another recipe.


Mix in the remaining whole egg and add a dash of water. Give the yolk mixture a good mix, then throw in most of the grated pecorino cheese into the bowl.


Next, transfer the cooked pasta to the same frying pan that you used to cook the pancetta. Swirl the pasta around so it soaks up all the flavour, then switch the hob on to a low heat.


Pour in the eggy concoction and be mindful when cooking it. If the pan gets too hot, you'll end up with scrambled eggs.


After a few minutes, you should have a creamy, silky sauce. Dish everything out onto a plate, sprinkle with any leftover grated cheese, and season with black pepper. Your delectable pasta should now be ready to tuck into.
