Here's how to make Gordon Ramsay's adventurous chocolate and avocado mousse in as little as three steps.
Ingredients
Two large ripe avocados, peeled and stoned
Four tbsp runny honey, to taste
One tsp vanilla extract
50g raw cacao powder
Method1. Blitz the avocados in a food processor until smooth.
2. Add three tablespoons of honey to the food processor, as well the honey, vanilla extract and cacao powder and blitz again until combined.
3. Spoon the mousse into either shot glasses, wine glasses or another serving dish - then place them in the fridge for an hour before serving.
TipsGordon Ramsay said: "Because honey is so sticky, it can be difficult to measure it accurately.
"If, however, you coat the measuring spoon with a thin layer of flavourless oil like groundnut, it will slip right off."
This means you can ensure an accurate measurement of the honey by simply dipping the spoon in groundnut oil before each spoonful.
Plus, in this recipe, you can add as much honey as your taste desires, so if you would like a bit more, you can always taste the mixture when it's in the blender before refrigerating it.
