Ingredients to make Modur Pulao
- 1 cup basmati rice
- Ghee as required
- 1/2 inch cinnamon
- 3-4 cloves
- 2 bay leaves
- 4 cardamoms
- 4-5 whole black peppers
- a pinch of saffron
- 5-10 almonds (cut into thick pieces)
- 5-10 tbsp cashews (cut into thick pieces)
- 15-20 raisins
- 1 cup sugar
- water as required

- To make Pulao, first wash the Basmati rice thoroughly and soak it in water for half an hour.
- Soak saffron in 2 tablespoons water.
- Now pour 2-3 cups of water in a pan and boil it. When the water boils, add rice in it and cook.
- Cook only 3/4th of the rice in the pan. When the rice is cooked, drain the water and keep it aside.
- Now heat ghee in a pan and add cloves, cardamom, black pepper, cinnamon and bay leaf and fry.
- When the masala dissolves, dissolve sugar in half a cup of water, mix it with the masala and cook until it thickens.
- Now add half cooked rice in it and cover and cook, if water is less for rice then add more water.
- When the rice is cooked, turn off the flame and keep it aside and heat 2-3 tablespoons of ghee in a pan.
- Now fry dry fruits in ghee and add cooked rice to it and mix.
- Add soaked saffron to the rice, mix and serve hot.
